Ragi roti is one of my favorite dish since childhood. It may seem like a simple dish. But since it’s a combination of Ragi / finger millets and moringa leaves, its packed with lot of nutrients. Ingredients:
Ragi / Finger Millet flour – 2 cups
Rice flour – 1tbsp
Finely chopped onions – 1 cup
Moringa leaves – 2 cups
Red chilli – 2 nos (Cut into 1 inch size)
Crushed garlic cloves – 6 to 8
Red chilli powder / chilli flakes – ¼ tbsp (Optional)
Salt – As per requirement
Water – As per requirement
Oil – for cooking

Preparation:
- Take a large bowl and mix all the ingredients along with two cups of water.
- Knead it into a smooth dough.
- It should not be too dry so add necessary water accordingly.
- Now make an orange sized ball out of the dough and make it slightly flat.
- Heat a dosa / roti tawa and grease it with some oil.
- Place the dough on the tawa and start spreading it over. Just dab on some water to help you spread it out evenly.
- Brush them with oil, flip them and cook in medium flame until it’s cooked well.
- Once you flip the roti, poke it randomly with folk to get them cooked evenly.
- Repeat the same process for all the rotis.
- Serve hot rotis with chutney or side dish of your choice and enjoy a healthy breakfast.
Note: If you are not comfortable in spreading the dough directly over the hot tawa, you can spread it over a greased butter paper and then place it over the tawa.
