Homemade coconut barfi is always a very tasty sweet to relish. Combining it along with mango will add on an extra flavor to it and also reduces the amount of sugar in the dish. The sweetness of the mangoes go along with the coconut so well.

Ingredients:
Mango cubes ā 1 cup
Milk ā ½ cup + 1 tbsp
Sugar ā 1 cup
Desiccated coconut ā 3 cups
Cardamom powder ā ¼ tbsp
Saffron ā 1 pinch
Ghee / butter ā For greasing the tray
Preparation:
- Firstly, blend the mango cubes and milk into a smooth paste in a mixer grinder / blender.
- Soak the saffron in 1 tbsp of hot water.
- Now take a large kadai and transfer the mango paste and leave in the stove on medium flame.
- Add 1 cup of sugar and mix until it dissolves completely.
- Once the sugar is completely melted down, add 3 cups of desiccated coconut and mix well.
- Stir continuously and continue to cook on medium flame.
- After 15-20 mins you can see the mixtures starting to separate from pan.
- Add the saffron milk, cardamom powder and mix well.
- Transfer the mixture into a greased tray lined with butter paper.
- Set well forming a block and cut them into cubes of desired size. Let it cool down at room temperature.
- Your tasty and moist barfi is now ready to be served. Store it in an airtight container for a week in refrigerator.
