Egg fried rice

Ingredients Required:

Basmathi rice – 1 cup

Egg – 4 nos

Carrot – 1/4 cup

Beans – 1/4 cup

Cabbage – 1/4 cup

Big onion – 1(medium size)

Spring onions – 1/4 cup

Black pepper – as per requirement

Salt – as per requirement

Refined oil – 3 tbsp

Preparation :

  • Soak the Basmathi rice in water for 10 mins.
  • Bring 8-10 cups of water to boiling point in a large pot. Add the and pour 1 tbsp of oil to prevent the rice from turning sticky.
  • Cook the rice al dente. Rice must not be mushy, it must be grainy. Drain the water from the rice and keep it aside.
  • Now take a large pan and add 2 tbsp of oil.
  • Firstly add finely chopped onions and fry them to medium (should not turn golden).
  • Now add all the chopped vegetables(except spring onion) and stir fry them.
  • Add 1/2 tbsp salt and 1/2 tbsp pepper. Cover the pan with a lid and cook for 2 mins.
  • Once the vegetables are cooked, add spring onions.
  • Now add the cooked rice little by little and mix it gently. Add more salt and pepper as per requirement and mix well.
  • Take a small pan, add 1/2 tbsp oil. Break open the eggs and add them to the pan to make scrambled eggs. Add salt and pepper to it.
  • Not add the scrambled eggs to the rice.
  • Lastly garnish with some spring onions and enjoy tasty egg fried rice.
